About it
Chicken-fried steak is a Texas-German inheritance — schnitzel technique in beef country — and the gravy is not a garnish but half the dish. A dry CFS is a failed plate; the standard is gravy to the plate's edge.
Making it
Pound cube steak thin, dredge in seasoned flour, dip in egg wash, dredge again, and fry crisp. Make the cream gravy in the same pan from the drippings and pour it over at the table.
Serving it
On a warm plate, gravy over the steak and the mashed potatoes in one pour. Knife work is expected; the crust softens as it sits.
Swaps & pairings
Pepper gravy makes it the steakhouse version; plain cream gravy the café version. Some houses serve the gravy on the side to protect the crust — the catalog notes it without endorsing it.
