About it
The dressing base is holiday economy at its best: the bread-and-cornbread crumb that was baked to hold turkey gravy becomes, a day later, the thing the gravy is poured on. Nothing wasted, twice served.
Making it
Press leftover dressing into a pan, chill if loose, and reheat in a hot oven or slice and fry until the edges crisp. The texture should go from scoop to slab.
Serving it
As the platform of the leftover plate: dressing, sliced turkey, gravy over all. Also fried in patties under a fried egg and gravy.
Swaps & pairings
Fried as patties it becomes a breakfast base under eggs. The cornbread-dressing South and bread-stuffing North both claim the method.
