About it

Hamburger gravy belongs to the institutional kitchens — barracks, school cafeterias, and farmhouse suppers — that fed many people from little meat. It is SOS's ground-beef cousin and often the first gravy a cook learns.

Making it

Brown ground beef and drain all but a spoon of fat. Stir in flour, then milk or stock, and simmer until the beef is suspended in a smooth, peppery gravy. Onion cooked with the beef is the cafeteria standard.

Serving it

Over toast points, mashed potatoes, or rice, in the cafeteria line and the farmhouse kitchen alike. It is a main-dish gravy, not a sauce on the side.

Swaps & pairings

Make it with stock for a brown, diner-style version or milk for the school-lunch classic. A dash of Worcestershire is the line cook's signature.
