About it

Hash browns under gravy are a truck-stop architecture: a crisp potato platform, eggs on top, gravy over everything. The potatoes must be genuinely crisp or the plate collapses into porridge.

Making it

Squeeze shredded potatoes dry — water is the enemy — then fry in fat on a hot griddle, undisturbed, until deeply crisp. Season, flip once, and plate immediately.

Serving it

As the platform of the breakfast stack and under eggs with gravy poured over, diner-style. Also the side that eats the gravy a plate cannot hold.

Swaps & pairings

Lacy, well-browned edges are the standard. Latke-style with onion moves the plate toward deli territory.
