About it
Pepper gravy is the steakhouse and chain-diner form of cream gravy, built for chicken-fried steak and often shaken from a mix packet behind the counter. Its cracked-pepper finish is the whole signature.
Making it
Build a blond roux in drippings or butter, whisk in milk and a little cream, and simmer smooth. Finish with coarse cracked black pepper — more than seems polite — and salt to taste.
Serving it
Poured over chicken-fried steak and mashed potatoes, the pepper showing on the surface. Also the biscuit gravy of Texas diners.
Swaps & pairings
Crack the pepper fresh over the finished gravy, never before, for the sharpest bite. A cream finish makes it the steakhouse version.
