About it
Chicken-fried chicken exists because the CFS method was too good to leave to beef. Pounded flat, the breast fries fast and stays juicy; pepper gravy makes it the steakhouse lunch it has become.
Making it
Pound a chicken breast even, dredge in seasoned flour, egg wash, flour again, and fry until deeply golden. Make pepper or cream gravy in the pan drippings and pour over.
Serving it
Breast center-plate under a full pour of gravy, mashed potatoes catching the rest. The chicken-fried steak's equal at Texas cafés.
Swaps & pairings
Pepper gravy for the steakhouse plate, plain cream gravy for the café. A boneless thigh fries juicier and is the cook's choice.
